Butter vs Mayo Lobster Roll

Prep time: 12 minutes

Ingredients:

  • 2x 1.25lb fresh PEI Lobsters
  • 2 brioche buns
  • fresh chive, chopped finely (optional)
  • 1 tbsp. fresh dill (optional)

Butter

  • 2 oz butter
  • 1/4 tsp. kosher salt
  • 1/4 tsp. lemon juice

Mayo

  • 2 tbsp. mayo
  • 2 tbsp. celery, finely diced
  • 1/4 tsp. kosher salt
  • 1/4 tsp. lemon juice

Directions:

  1. Poach your lobster for 15 minutes in a large pot. Chill. Shell lobster and break down into bite size chunks.
  2. Prepare butter in one dish and mayo in another. Mix in chive and/or dill, putting some aside for garnish (optional).
  3. Divide lobster meat into two potions: dress one with butter and the other with mayo.
  4. Toast the sides of your bun and stuff full. 
  5. Garnish, as desired.
