Butter vs Mayo Lobster Roll

Ingredients:
- 2x 1.25lb fresh PEI Lobsters
- 2 brioche buns
- fresh chive, chopped finely (optional)
- 1 tbsp. fresh dill (optional)
Butter
- 2 oz butter
- 1/4 tsp. kosher salt
- 1/4 tsp. lemon juice
Mayo
- 2 tbsp. mayo
- 2 tbsp. celery, finely diced
- 1/4 tsp. kosher salt
- 1/4 tsp. lemon juice
Directions:
- Poach your lobster for 15 minutes in a large pot. Chill. Shell lobster and break down into bite size chunks.
- Prepare butter in one dish and mayo in another. Mix in chive and/or dill, putting some aside for garnish (optional).
- Divide lobster meat into two potions: dress one with butter and the other with mayo.
- Toast the sides of your bun and stuff full.
- Garnish, as desired.
