Crab Stuffed Baked Potatoes
- 1 - 6 oz/170 g pkg. rock crab meat
- 6 potatoes, baked
- 1 tbsp/15 ml butter
- 3/4 cup/175 ml sour cream
- 1/4 cup/50 ml grated onion
- 1/4 tsp/1 ml pepper
- 1/4 cup/50 ml diced mushrooms
- 1/2 cup/125 ml grated cheddar cheese
Preheat oven to 375 degrees F (190 degrees C). Cut baked potatoes in half lengthwise and carefully scoop out the insides reserving the skins. In a bowl, combine potato, butter, sour cream, onion and pepper. Beat until smooth. Fold in crab meat and diced mushrooms and then put mixture back equally into the 12 potato halves. Sprinkle with grated cheese and place on a baking sheet. Bake for 10-15 minutes until hot. Serve at once. Serves 6.
